National Chocolate Chip Day

CHOCOLATE IS CHEAPER THAN THERAPY, AND YOU DON'T NEED AN APPOINTMENT. 

Ahhhhh chocolate. I have never met anyone in this world who doesn't like chocolate, especially the chocolate chip. Chocolate has a special place in my heart not only because it tastes amazing, but because it originated in Holland, and was made by a dutch chemist. Chocolate originated in 1828 when a dutch chemist Johannes Van Houten found a way to separate the fat (cocoa powder) from a cocoa bean. The chocolate chip dates back to 1930 when it was "invented" for use of Toll House cookies. It wasn't until 1939 that chips were packaged as we know them. Prior to that, Nestle printed the recipe for chocolate chip cookies on the back of the bars and included a little chipper so people could use them to make cookies easily.

In honor of Nation Chocolate Chip Day, I decided to cook up a bunch of different chocolate chip pastries, and desserts, and I am going to share with you my secret chocolate chip cookie recipe!

 
To make these cookies:
Evenly position 2 racks in the middle of the oven and preheat to 375 degrees F. (on convection setting if you have it.) Line 2 baking sheets with parchment paper or silicone sheets. (If you only have 1 baking sheet, let it cool completely between batches.)

Put the butter in a microwave safe bowl, cover and microwave on medium power until melted. Cool slightly. Whisk the sugars, eggs, butter and vanilla in a large bowl until smooth.

Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a wooden spoon; take care not to over mix. Stir in the chocolate chips or chunks.(I prefer using Nestle Toll House)

Scoop heaping tablespoons of the dough onto the prepared pans. Wet hands slightly and roll the dough into balls. Space the cookies about 2-inches apart on the pans. Bake, until golden, but still soft in the center, 12 to 16 minutes, depending on how chewy or crunchy you like your cookies. Transfer hot cookies with a spatula to a rack to cool. Serve.






Today I will also be making, chocolate chip mint cupcakes, peanut butter chocolate chip cookie cups, pumpkin chocolate chip granola bars, chocolate chip pancakes, and banana, espresso, and chocolate chip scones.
